Non-alcoholic Tom Collins

Our top pick for a refreshing spring cocktail is a non-alcoholic Tom Collins made with Seedlip Garden, a non-alcoholic distilled spirit flavoured with peas, rosemary, spearmint, and thyme. Thanks to the botanicals this refreshing mocktail is loaded with flavour. 

Ingredients (makes one)

60ml Seedlip Garden or a botanical non-alcoholic gin

30ml freshly squeezed lemon juice

30ml sugar syrup*

90ml tonic

*Make a homemade sugar syrup by adding equal parts water to sugar and gently heating in a small saucepan until the sugar dissolves. Transfer to a sealed glass container and store in the fridge for up to two weeks.

Mix the ingredients together and shake with a handful of ice. Serve in our Gatsby Highball, which is inspired by the 1920s. If you’re looking to impress guests with a flavourful mocktail, then this spin on a popular tequila cocktail won’t let you down. Refreshing and layered with flavours, it’s surprisingly easy to prepare.

Ingredients (makes one)

60 ml freshly squeezed lime juice

30 ml freshly squeezed orange juice

30ml freshly squeezed lemon juice

a dash of olive brine

1 teaspoon agave nectar or maple syrup

60 ml tonic or club soda

Apple and Elderflower Punch

For the warmer – hopefully hot – summer months, we’ve opted for a refreshing non-alcoholic punch, packed with apple, elderflower, and mint.

Ingredients

75ml elderflower cordial

1 litre cloudy apple juice

A small handful mint leaves, roughly chopped

1 bottle of sparkling water

Mix the elderflower cordial with cloudy apple juice. Add the mint leaves and stir well. Fill the glasses halfway with the juice and top up with sparkling water. The Peach Cooler

Ingredients

Juice of 2 lemons and two limes

1 lemon and 1 lime, thinly sliced

peach nectar

cloudy lemonade

sparkling water

finely sliced strawberries

Mix the lemon juice and lime juice a large jug, add the sliced lemon and lime, and a handful of ice cubes. Add peach nectar to fill about one-third of the jug and top up with lemonade. Pear and Pumpkin smoothie

Autumn months bring a slight chill to the air, so if you’re looking for a warming seasonal mocktail, then we have just the ticket! This pear, pumpkin and ginger juice is the perfect early evening mocktail to sip by a firepit as the sun sets. It’s definitely earned a spot on the best non-alcoholic drinks of 2024.

Ingredients

50g pumpkin or butternut squash, peeled and deseeded.

1 ripe pear

250ml orange juice

1cm thick slice ginger

Blend the ingredients in a blender and pour into a Wine & Bar Tumbler.

 

Blackberry and Bay spritz

For a more refreshing, non-alcoholic autumnal drink opt for a blackberry and bay lemonade mocktail.

Ingredients

3 bay leaves

50g golden caster sugar

1 lemon

200g blackberries (fresh or defrosted)

300ml sparkling water

Pour 350ml of water into a saucepan and add the caster sugar and the bay leaves. Gently bring to the boil, then leave to cool, and remove the bay leaves. Chop the lemon into chunks and put in a blender. Add the blackberries and the bay leaf infusion. Blend until the mixture is smooth and strain it through a sieve. Serve in tumblers or wine glasses and top up with sparkling water. Serve in Six White Wine Glasses.

Non-alcoholic Espresso Martini

Ingredients

30ml espresso

30ml sweetened condensed milk

Dash of milk

30ml non-alcoholic vodka (optional)

Ingredients

6 limes (cut into wedges)

100g caster sugar

30g mint leaves

320ml non-alcoholic white rum

500ml coconut water

250ml soda water

Crushed ice

Cranberries

Mix the limes, caster sugar and most of the mint leaves (reserving some for the garnish). Squeeze the limes and mix with the sugar until it has dissolved. Add the non-alcoholic white rum and coconut water, then top up with soda water and stir well. Add a handful of crushed ice to 6-8 highball glasses and divide the mocktail between the glasses. Garnish with a few cranberries and a mint sprig.
